Over at the Russell household we can't deny our love for beef, all 5 of us! One of my husbands favorite suppers is my "Muy Loco Burritos." Here is my recipe, though some days I need a little change and mix it up a bit!
Muy Loco Burritos
1 Ib. of awesome beef
As many flour tortillas as you need
a colorful bell pepper
a sweet and tangy tomato
one vidalia onion
Fajita or taco seasoning (I prefer fajita)
Taco bell taco sauce (YUMMM!)
Sour cream
Guacomole ( I'm the only one who enjoys this with my burrito)
Bag of frozen corn ( or a can if you wish)
Can of yummy black beans
bag o' shredded cheese
Brown your meat while rockin out to some Train. Dice up your 3 veggies, and try not to cry while cutting that onion! Mix seasoning in with beef WHILE its cooking. Cook corn and black beans in their own pot. Butter each tortilla then place on a plate on top of one another. Cover plate with another plate and heat up for 30 seconds-40 seconds. Mix veggies in with beef. TIME TO SERVE! Place a tortilla on a plate and add guac, sour cream, and taco sauce. Pile on some awesome beef followed by corn and black beans. Sprinkle a bunch of cheese! THEN.... roll on up and EAT!!! You will want seconds!
P.S. I have children that share this meal therefore I can't add jalapenos, but they do make it even BETTER!
Oh and here is my precious son enjoying his in the bed while watching Baby Einstien!
